Encrusted

now there aren't many times when the word "encrusted" is used in a positive context - "with diamonds" being the obvious exception (as long as they are ethical diamonds!), but encrusted with chocolate drops is another!

Eli & I (yes you read that right) made this lovely, simple chocolate cake for father's day on sunday :-)

we used this recipe-

Ingredients:

  • 1 1/2 cups flour
  • 1 cup sugar
  • 3 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tbsp vinegar
  • 5 tbsp melted margarine
  • 1 cup cold water
  • 1/2 cup chocolate chips

Preparation:

Preheat the oven to 180 degrees.

In a large bowl, combine the flour, sugar, cocoa powder, and baking soda. Add the vanilla, vinegar, margarine. Add the water and mix well.

Pour into a medium size baking pan, and sprinkle the chocolate chips on top.

Bake for 30 to 35 minutes, or until a knife inserted in the center comes out clean

Easy peasy! we almost always have these ingredients on hand, and it's a fantastic basic choccy cake that can be whipped up super fast!

Looks yummy. We have a recipe that is almost the same that's a fave here. Ours uses oil instead of marge, and I've not used choc chips in it before. Somehow I think this would gain approval from the crowds here. Must give it a whirl, thanks :)

yeah i was thinking that oil would be good instead of marge, honestly 5tbsp of marge? maybe if you had a tbsp melon baller, but otherwise it's a bit silly ;)

the choc chips were good! makes it a little bit more special than plain, but without fluffing around with icing...

Yummmmmmm ... that looks so good! You are great at taking food photos - I try all the time but they end up looking like something that the cat dragged in ;) Eli baking sounds interesting!!!
